Cackalacky Chicken Lollipop Recipe
This is the savory recipe that was made famous by Cackalacky's "Zest Prez," Page Skelton - as featured at Memphis In May World BBQ Championship, The American Royal BBQ World Series, ABC's The Tony Danza Show, and Food Network's "BBQ With Bobby Flay - and beyond!"

 

What's A Cackalacky Chicken Lollipop, Anyway?

Chicken Lollipop

A Cackalacky Chicken Lollipop is a "frenched" chicken wing drumette (the drumstick shaped portion of a chicken wing) that is wrapped in bacon and grilled, roasted, or smoked to perfection - and finished with Cackalacky Spice Sauce.  Cackalacky Chicken Lollipops make the perfect party starter, tailgate morsels, and, even a great meal! 

 

Easy Step-By-Step Chicken Lollipop Recipe

Basic Ingredients:

- A bunch of Chicken Wing Drumettes (available at almost any butcher)

- An equal number of thinly sliced (regular) Bacon strips.

- Wooden Toothpicks

- Cackalacky® Spice Sauce

- Cackalacky Drummy Device

 

Step 1) Prep 'em!

Lollipop    Chicken Lollipop

"French" the chicken wing drumettes by cutting the skin and tendons
around the base of the drumette, as shown.

Chicken Lollipop     

Push chicken meat up into a "ball" -  forming a lollipop-like shape.

     

   

Wrap the ball of chicken meat with a strip of bacon.
Secure the bacon with a sturdy wooden toothpick.

   

 

 

Step 2) Smoke 'em!

 

Fire-up your cooker or smoker and bring temperature up to about 250* F.  Use hickory or apple wood chips/chunks for excellent smoke fuel and flavor.  Or, experiment with other woods to add your own signature flavor!   

Then, place the Chicken Lollipops in the slots in your Cackalacky Drummy Device  - and place on the grill grate and close the lid.  Cook for approximately 1 1/2 to 2 hours.  (Most folks like their Chicken Lollipops slightly overdone - cooked to an internal temperature of about 175* F.)

If using a kettle cooker, barrel cooker, or gas grill, be sure to set up for "indirect heat" cooking method - placing the chicken lollipops cooking on the cooking "head-down" on your grill grate away from the heat source. 

To check done-ness, use a probe thermometer for an accurate internal temperature reading.  Cooking times tend to vary with various cuts of meat.  We like our Chicken Lollipops slightly crispy and "overdone."

Step 3)  Sauce 'em!

After Chicken Lollipops reach an internal temperature of about 175* F, and when the bacon is crisp and the juices "run clear" from the chicken, the lollipops are just about done!  (We like our slight overdone and crispy!)  Then, simply brush the lollipops Cackalacky Spice Sauce and continue cooking for another 10-15 minutes allowing sauce to "set up" or caramelize.  For recipe authenticity, we recommend using the original Cackalacky Spice Sauce.

Step 4) Eat 'em!

   

After cooking with Cackalacky as a finishing sauce for about 10-15 minutes, the Chicken Lollipops are ready to be eaten!  Serve with an extra side Cackalacky Spice Sauce as a dipping sauce! 

 

 

Various Chicken Lollipop Cooking Methods

If you are feeling really hungry and adventurous, try this recipe with chicken drumsticks to make HUGE Chicken Lollipops! Just follow the same instructions - and let the lollipops cook a bit longer.

* Charcoal Grill Cooking Method *

 

If you are using a charcoal kettle-style grill or barrel cooker, we recommend that you cook your Chicken Lollipops via the indirect cooking method.  imply placing the lollipops opposite the heat source - on the opposite side of your charcoal pile. 

 

* Propane Grill Cooking Method*

You can also cook the Chicken Lollipops via indirect heat on your propane grill by simply placing the lollipops opposite the heat source - over an unlit burner.

 

* Oven Cooking Method Method *

Preheat the oven to 250 degrees F. and cook the lollipops for about 1 1/2 to 2 hours.  To prevent accidental fire, be sure to put a grease tray under the Chicken Lollipops to catch the grease drippings!
