                                                                                  Cackalacky Cerveza Ceviche

Ceviche is a traditional citrus-marinated "chilled" seafood appetizer, popular in mainly Latin American countries.  Our Cackalacky Cerveza Ceviche recipe is a zesty break with tradition.  Chiefly, this recipe calls for an "India Pale Ale," which has a higher hop content (IBU - International Bitterness Unit) as well as a higher-than-average alcohol content (ABV - Alcohol By Volume), both of which help break down (or, "cook") the proteins in the fish - while the "grapefruity" flavor notes of the hops compliment the citrus flavors of the lemon and lime juice in the ceviche marinade.  The sweet, malty, body of the IPA beer also brings "balance" to the inherent acidity of dish.  Cackalacky, of course, brings it all together!

Ingredients:
2 Lbs fresh
*Tilapia, cubed into 1″ pieces
12 Oz Imperial Pale Ale*

1 large lemon, reamed/juiced
2 large limes, reamed/juiced
½ cup cilantro (about one fistful)
1 red bell pepper
1 yellow bell pepper
2 cups red onion, diced
2 fresh garlic cloves, finely minced
2 ears fresh cut corn, shaved off the cob
1 Tbsp soy sauce
1 Tbsp EVOO
¼ cup Cackalacky Spice Sauce
Kosher salt (to taste)

Directions:
In a glass (non-reactive) bowl, whisk together IPA, lemon juice, lime juice, garlic, soy sauce, EVOO, Cackalacky Spice Sauce. Then, place the tilapia pieces on the bottom of the bowl, followed by the rest of the ingredients on top (red onion, corn, bell peppers, cilantro). Cover and refrigerate for a total of four hours. (After about two hours of "cooking," gently stir and fold all of the ingredients together and return to the refrigerator.)

Using a slotted spoon, serve the ceviche as a
chilled appetizer in a large dipping bowl (or, in individual martini glasses) along with tortilla chips - garnished with lime wedges and fresh cilantro. Or, serve with flour tortillas to make tangy Cerveza Ceviche tacos as an entree.

Notes:
  *We recommend that you "prep" the tilapia by blanching the fish in boiling water for one minute. Also, you may substitute the tilapia with shrimp, ahi tuna, sea bass, octopus, etc. Combinations of fish and shellfish also taste great!

**If your grocer doesn't carry an IPA, try substituting with a heavily hopped American Pale Ale.  E.g., Sierra Nevada Pale Ale.
