Cackalacky Cerveza Ceviche
Ceviche is a
traditional citrus-marinated "chilled"
seafood appetizer, popular in mainly
Latin American countries.
Our Cackalacky Cerveza
Ceviche recipe is a
zesty break with tradition.
Chiefly, this recipe
calls for an "India
Pale Ale," which has a
higher hop content (IBU
- International Bitterness Unit) as well
as a higher-than-average alcohol content
(ABV - Alcohol By Volume), both
of which help break down (or, "cook")
the proteins in the fish -
while the "grapefruity" flavor notes of
the hops compliment the citrus flavors
of the lemon and lime juice in the
ceviche marinade. The
sweet, malty, body of the IPA
beer also brings "balance" to
the inherent acidity of dish. Cackalacky,
of course, brings it all together!
**If your grocer doesn't carry an IPA, try substituting with a heavily hopped American Pale Ale. E.g., Sierra Nevada Pale Ale.
