Our World-Famous Chicken Lollipop Recipe!

Thanks to a bit of recent - and, unexpected - publicity, we've received several requests for our (in)famous Cackalacky chicken lollipop recipe. 
 
A Bit Of Chicken Lollipop History...  
This is the recipe that we've cooked for Food Network's "BBQ with Bobby Flay," ABC's "The Tony Danza Show," Memphis In May World BBQ Championship, The American Royal "BBQ World Series" in Kansas City, The North Carolina State Barbecue Championship, etc. And, most recently, our chicken lollipops were featured Fine Living Network's "15 Bodacious BBQ's." (Much to our surprise, our lollipops ranked #2 out of the show's 15 "favorites" from around the nation!)  

So, What's A Cackalacky Chicken Lollipop, Anyway?

A Cackalacky Chicken Lollipop is a "frenched" chicken wing drumette (the drumstick-shaped portion of a chicken wing) that is wrapped in bacon, grilled to perfection, and finished with Cackalacky Spice Sauce.  Cackalacky Chicken Lollipops make the perfect party starter, tailgate morsels, and, even a great meal! 

You'll Need:
A bunch of chicken wing drumettes (available at almost any butcher)
An equal number of thinly sliced (regular) bacon strips.
An equal number of wooden toothpicks (pre-soaked in water for about 1/2 hour)
At least one bottle of Cackalacky® Spice Sauce
 
Easy 1-2-3 Directions:
Step 1) Prep 'em!
Lollipop    Chicken Lollipop
Simply "french" the chicken wing drumettes by cutting the skin and tendons
around the base of the drumette, as shown.
Chicken Lollipop     
Push meat up into a "ball" -  forming a lollipop-like shape.
   
Wrap the ball of chicken meat with a strip of bacon.  Then, secure the bacon with a sturdy wooden toothpick.
   
 

Step 2) Grill 'em & sauce 'em!

Fire-up your charcoal or gas grill and simply grill the lollipops to perfection!  Turn or, roll the lollipops fairly often to avoid excessive scorching and to ensure that they cook evenly.    

In the last few minutes of grilling, simply brush the lollipops with Cackalacky Spice Sauce and continue cooking for another few minutes allowing sauce to "set up" or caramelize a bit. 

The lollipops are just about done when the bacon is crispy and the chicken juices "run clear." (If you have a thermometer, aim for an internal temperature of 175* F) 

 

Step 3) Serve 'em & eat 'em!
