 Cackalacky Corn & Black Bean Soup

 

 

 Cackalacky Corn & Black Bean Soup

This is a zesty cure for a chilly night!

Ingredients:
1/4 cup olive oil
1 medium yellow onion, diced
2 tbsp. minced fresh garlic
4 cups vegetable stock
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can whole sweet corn, drained
1 (5-ounce) bottle Cackalacky® Spice Sauce
1 cup water
1 tbsp. ground cumin
Pinch ground cinnamon
Kosher salt, to taste
Fresh cilantro, for garnish
Chopped green onions, for garnish
Flour tortillas, cut into strips, for garnish

Directions:
In a medium stockpot, heat the olive oil and sauté the garlic and onions
until lightly caramelized. Add the vegetable stock, black beans,
sweet corn, Cackalacky® Spice Sauce, water, cumin and cinnamon.
Bring pot to a boil, reduce heat and simmer for at least 15 minutes.
Season to taste with kosher salt.

Serve in soup bowls garnished with cilantro, chopped green
onion and tortilla strips.
